(Pastinaca sativa) Biennial or short-lived perennial in the Umbel Family. This original variety is the result of a breeding project started in 2005. We have crossed at least six varieties, selecting for drought-tolerance, winter-hardiness, large size, straightness, and taste. An excellent food for the money-poor (like us farmers), due to its hardiness, nutrition and flavor.
Cultivation & harvesting suggestions:
We do not recommend growing parsnips outside the Pacific NW. The PNW is perfect for parsnips because it gets cold enough to bring out their sweetness (unlike California) but not so cold as to kill them (like everywhere else in the North). Direct seed from January through April. Thin to 6” apart, rows 18” apart, Water during summer drought. Begin harvesting no earlier than December, after frosts.
