Chicory, Italian Heirloom Mix
(Cicorium intybus) Annual or biennial in the Aster Family, native to Eurasia. This mix of Italian heirloom chicories features a variety of attractive dandelion-shaped foliage, ranging from the smooth-edged to the deeply-serrated, with red, green or white ribs. The sturdy tap roots are used as a coffee-additive. Charming flowers are “chicory” blue (like the crayon). Take inspiration from the gastronomically-advanced Italians and expand your palate to embrace “bitter” as its own flavor and not just the undesirable opposite of “sweet”. These are our favorite greens! Drought-tolerant once established.
Planting suggestions: Can tolerate poor soils, including heavy clay; Average garden soil is sufficient. Direct-sow from early Spring through late Summer. Will overwinter without protection. Harvest leaves as need, older ones first before they fade. Let grow several months for root harvest. For beverage purposes, chop, dry and roast the roots, then pulverize them in a coffee-grinder and add to coffee grounds at desired ratio. A New Orleans tradition, from the French, who came up with the idea during a war when coffee was scarce.
