Tiger's Eye Bean
(Phaseolus Vulgaris) Also called Pepa de Zapallo, these bush beans have a rich golden or maroon color, with varied swirling patterns. They are said to resemble the eye of a tiger, hence the name. They are well loved not only for their appearance, but for a creamy texture and nutty flavor that lends itself to delicious soups, chilis, refried beans, and other dishes. Originating from South America, possibly Chile or Argentina, these beans have been treasured over many years and in many places.
Planting suggestions: These beans are not hardy and will not tolerate frost well. They prefer full sun and loose soil. Wait to sow seeds until well after the danger of frost is past, in around May or June, depending on your region. Sow seeds ~ 1” deep, in rows 1 ft apart, thin to around 3-6” apart. Stop watering around August and harvest pods that are dry.
