Bean, Yellow Eye
(Phaseolus Vulgaris) This variety of bean is an heirloom that is aesthetically pleasing, with mostly a cream color and a splash of gold that creates the “yellow eye.” These beans are good for cooking as they hold their shape and make for a creamy base when blended. Beans of all different kinds have been cultivated since before the 2nd millennium BCE. Common beans seem to have originated in mesoamerica, eventually spreading across the Americas, along with squash and corn. Corn, beans and squash are referred to as the “three sisters” by several Haudenosaunee tribes.
Planting suggestions: This is a bush bean that does not require a trellis. Direct-sow in the garden when soil has warmed and the danger of frost is past, as these beans do not tolerate frost well. Matures in around 90 days. Sow seeds 1” down, 3-6” apart, and in rows 1 ft apart.
